Cape Cod Cakes
Ingredients
- 1/4 cup arame or hijiki seaweed
- 1 cup apple juice
- 1/4 cup ginger, chopped
- 2 cloves garlic, chopped
- 1 pound extra firm tofu, hand crushed
- 1/2 cup onion, diced
- 1/2 cup red pepper, diced
- 1/4 cup celery, diced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 teaspoon paprika
- 2 teaspoon salt
- Black pepper, pinch
- 1/2 cup vegan mayonnaise
- 2 tablespoon yellow mustard
- 1 cup panko breadcrumbs, plus extra for coating patties
Method
- Preheat oven 350 degrees.
- Soak arame (5 minutes) or hijiki (10 minutes) in apple juice, ginger, garlic.
- Combine all ingredients together and mix well.
- Form into small patties and coat with additional breadcrumbs.

Bake for 20-25 minutes, turning once to evenly and lightly brown both sides.
Approximate Yield: 10-15 small patties
Vegan Tartar Sauce
Blend together

- 1/4 cup capers
2 small dill pickles, finely chopped
- 2 tablespoons lemon juice
- 1 tablespoon sugar
- Black pepper, pinch
